What Is Glycation and Why It Ages Your Skin

If you've heard "sugar ages your skin" but never quite understood the mechanism, this is it: glycation.

The definition: Glycation is a chemical reaction where sugar molecules attach themselves to proteins or fats in your body — without the help of any enzyme, which is part of why it's hard to reverse. When this happens to collagen, the result is called an Advanced Glycation End-product, or AGE.

Why AGEs matter for aging: Collagen's job is to give skin structure and elasticity — think of it as a flexible mesh underneath the surface. Glycation stiffens that mesh, making it brittle and cross-linked in ways it wasn't designed to be. Stiffened, cross-linked collagen contributes to sagging, fine lines, and a loss of the skin's natural bounce.

It's not just about diet: While high sugar intake is the biggest driver, glycation also happens naturally with age (it's one reason skin firmness declines even in people with excellent diets) and is accelerated by UV exposure and smoking.

Can you see it, or measure it? Yes — glycation is visible under certain skin-imaging technology, and some research has even correlated skin AGE levels with perceived age in photographs, sometimes more strongly than actual chronological age.

What actually slows it down:

  • Antioxidant-rich foods, which may help counter some of the oxidative stress that compounds glycation
  • Sun protection, since UV exposure appears to accelerate the process
