Butterfly Pea Bloom Mocktail

A drink built for the moment it changes color right in front of you — deep indigo blue that blooms into soft violet-pink the second lemon hits the glass. Floral, lightly sweet, and completely alcohol-free, it's less a cocktail and more a small piece of theater for your evening wind-down.
Ingredients
- 1 tsp Queen Omi Organic Butterfly Pea Powder
- 1/4 cup hot water (to bloom the powder)
- 1 cup soda water or tonic water, chilled
- 1 tbsp honey or simple syrup, or to taste
- Juice of 1/2 lemon
- Ice
- Optional: fresh mint or edible flowers, for garnish
Instructions
- In a small cup, whisk the butterfly pea powder with the hot water until fully dissolved into a vivid blue liquid. Let it cool slightly.
- Fill a glass with ice.
- Pour in the soda water, then add the honey and stir gently to combine.
- Slowly pour the butterfly pea mixture over the ice — it will layer into a deep blue.
- Garnish with mint or edible flowers if using.
- Just before drinking, squeeze the lemon juice directly into the glass and watch the color shift from blue to violet-pink as you stir.
Note: The color-change reaction comes from the acidity in the lemon juice — the more you add, the further it shifts toward pink. Adjust to taste, or add it gradually for a layered ombré effect in the glass.
